Cookery Schools


To work a season for Alpine Action in a Chalet, it is essential that either one half of a couple or our independent chalet hosts have cooking qualifications, professional cooking experience or be under taking a chalet styled cookery course. This is because you will need to be confident in providing your clients with delicious cuisine during their holiday. This includes a cooked breakfast; home baked afternoon tea, children’s high tea, canapés and a 3 course evening meal 5 days a week. You should be well presented with a flexible happy attitude. There are many different courses and we have listed a few here.


The Abinger Cookery School

At the Abinger Cookery School, our signature Chalet Cooks Courses are like no other. W​e believe that one of the main elements of an enjoyable chalet experience is the consumption of good quality food.

Our intensive syllabus aims to give our students a thorough overview of working and cooking in a chalet, incorporating basic to intermediate cookery training, knife skills, menu planning, sourcing ingredients, budgeting, time management, meal service, and an overall general view of life in the Alps.

We will teach you the skills necessary for cooking for large numbers, how to be organised and efficient in the kitchen, so as to maximise your free time on the mountain, and how to maintain your chalet throughout the winter, to make your life easier on changeover days and at the end of season.​

The family-run Avenue Cookery School is a London based school that specialises in 1 & 2-week long courses. They have a unique blend of professional yet relaxed teaching, covering all basic techniques through to sophisticated skills in order to fully equip you to fulfil your season with confidence and ease. Orchards Cookery is a multi-award winning cookery school that specialises in training and recruiting Chalet Cooks.  The five day or two week residential courses are intensive but great fun with dinner parties in the evenings…. There is an art to being a great Chalet Cook. We will show you how to master it, enabling you to get the most out of both your job and life in the mountains. With many seasons of experience in the chalet industry and working alongside ski companies we have designed a course to train the perfect chalet host.​






Join the Fresh Tracks team for a 1-week residential course in Polzeath, Cornwall where we will give you all the experience, skills and confidence you need to become an all-round great chalet host.  Designed and delivered by current seasonaires, we will show you how to get the best out of your ski season by teaching you how to prepare and cook chalet style meals as well as cover the full spectrum of chalet host responsibilities.  Alternatively Fresh Tracks can also be found online and you can access comprehensive, engaging courses that are available year-round, enabling you to learn and practice at home, at your own pace.
